Ingredients

Dough

  • 420 grams bread flour
  • 70 grams sugar
  • 7 grams instant yeast
  • 50 grams egg (about 1 egg at room temperature)
  • 300 grams milk or water
  • 40 grams unsalted butter (melted and cooled)
  • 6 grams salt

For shaping

  • oil or flour (for shaping)

Instructions

  • Activate yeast: Mix yeast, warm milk, and 1 tsp sugar; let sit 10-15 mins until foamy.
  • Mix dry ingredients: Combine flour, remaining sugar, and salt in a large bowl.
  • Add egg, cooled melted butter, and yeast mixture; stir to form a sticky dough. Cover and refrigerate overnight (8-12 hours).
  • Next day, divide dough into 16 pieces, shape into balls, and place in a greased pan. Cover and let rise at room temperature for 1-1.5 hours.
  • Preheat oven to 350°F (175°C). Bake rolls for 18-20 mins until golden brown. Cool slightly and serve warm.

Notes

Ensure the milk is just warm to activate the yeast without killing it.
