A flavorful homemade bread infused with a variety of olives and cheeses, perfect for sharing.

Ingredients

Dough

  • 3 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon rapid-rise yeast
  • 1.5 cups water (room temperature)
  • 0.5 cup Castelvetrano olives (pitted, roughly chopped)
  • 0.5 cup kalamata olives (pitted, roughly chopped)
  • 0.25 cup parmesan cheese (grated)
  • 0.25 cup asiago cheese (grated)
  • 1 teaspoon garlic (minced)

Instructions 

  • Mix flour, salt, and yeast in a bowl.
  • Add water and stir until combined.
  • Fold in olives, cheeses, and garlic.
  • Let dough rise for 18 hours, then shape into a ball on parchment.
  • Score the top, preheat oven with Dutch oven to 450°F, then bake covered for 30 min, uncovered for 15 min.
  • Cool for 30 minutes before slicing.

Notes

For best results, use a sharp knife to score the loaf before baking.
