Ingredients

Dry ingredients

  • 1 1/2 cups rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Wet ingredients

  • 1/2 cup unsalted butter, melted
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 3 medium bananas)
  • 1/4 cup milk (any kind)

Instructions 

  • Preheat oven to 375°F (190°C) and prepare a 12-cup muffin tin.
  • Mix dry ingredients in a large bowl.
  • Whisk melted butter and brown sugar, then add eggs and vanilla.
  • Stir in bananas and milk until combined.
  • Combine wet and dry ingredients, then divide batter into muffin cups.
  • Bake for 18-20 minutes, cool in pan 5 minutes, then transfer to wire rack.

Notes
