A quick and flavorful one-pan meal combining tender chicken, rice, and fresh spinach, perfect for meal prep and easy dinners.

Ingredients

Protein

  • 1 pound chicken breast (cut into bite-size pieces)
  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 cup jasmine or basmati rice (rinsed)
  • 2 cups low sodium chicken broth
  • 2 cups fresh spinach
  • ½ lemon juice of lemon
  • to taste Salt and black pepper
  • 2 tablespoons Greek yogurt (for serving (optional))

Instructions 

  • Heat olive oil in a large pan over medium heat. Cook chicken until browned and cooked through.
  • Add onion, garlic, and ginger; cook until fragrant and soft.
  • Stir in spices, then add rice and chicken broth. Bring to a boil, then simmer covered for 15 minutes.
  • Mix in spinach, cook until wilted, then add lemon juice. Season with salt and pepper.
  • Serve with optional Greek yogurt on top.

Notes

This dish is perfect for meal prep and can be stored in the fridge for up to 4 days.
