A flavorful and easy one-pan meal featuring tender garlic herb chicken breasts roasted with vegetables, perfect for weeknights.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts (Pound to even thickness if large)
  • 3 tbsp extra virgin olive oil (Divided)
  • 4 cloves garlic (Minced)
  • 1 tbsp fresh rosemary (Finely chopped)
  • 1 tbsp fresh thyme (Finely chopped)
  • 2 tbsp fresh parsley (Finely chopped, plus more for garnish)
  • 1 piece lemon (Zest and juice)
  • 1 tsp salt
  • 0.5 tsp black pepper (Freshly ground)
  • 0.25 tsp red pepper flakes (Optional)
  • 1.5 lbs baby potatoes (Halved or quartered)
  • 1 head broccoli (Cut into florets)
  • 1 red onion (Cut into wedges)

Instructions 

  • Preheat oven to 400°F (200°C). Grease a baking sheet.
  • Toss potatoes, broccoli, and onion with 1 tbsp olive oil, salt, and pepper. Spread on sheet.
  • Mix remaining olive oil, garlic, herbs, lemon zest, and juice. Season with salt, pepper, and red pepper flakes.
  • Pat chicken dry, season, and place on sheet among vegetables. Spoon marinade over everything.
  • Roast for 25-30 minutes until chicken reaches 165°F and vegetables are tender. Rest for 5 minutes, garnish with parsley.

Notes

Use a meat thermometer to ensure chicken is cooked through.
