Instructions
Preheat oven to 400°F (200°C). Grease a baking sheet.
Toss potatoes, broccoli, and onion with 1 tbsp olive oil, salt, and pepper. Spread on sheet.
Mix remaining olive oil, garlic, herbs, lemon zest, and juice. Season with salt, pepper, and red pepper flakes.
Pat chicken dry, season, and place on sheet among vegetables. Spoon marinade over everything.
Roast for 25-30 minutes until chicken reaches 165°F and vegetables are tender. Rest for 5 minutes, garnish with parsley.
Notes
Use a meat thermometer to ensure chicken is cooked through.
