A flavorful and easy one-pan meal featuring juicy chicken breasts, crispy potatoes, and crunchy green beans, all roasted to perfection with aromatic herbs.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts (tender and juicy, perfect for soaking up all the flavors)
  • 1 lb baby potatoes (halved; golden crispiness adds heartiness)
  • 1 lb green beans (trimmed; bright and crunchy)

Oils & Seasonings

  • 4 tbsp olive oil (divided; for roasting)
  • 4 cloves garlic (minced; offers a bold, aromatic base)
  • 1 tbsp fresh parsley (chopped, or 1 tsp dried)
  • 1 tsp thyme (earthy and fragrant)
  • 1 tsp rosemary (robust, piney taste)
  • 1 tsp paprika (introduces a sweet, smoky note)

  • to taste pepper pepper (fresh cracked black pepper)
  • 1/2 lemon lemon (juice of; optional but recommended)

Instructions 

  • Preheat oven to 400°F (200°C). Grease a large sheet pan.
  • Mix 2 tbsp olive oil, garlic, parsley, thyme, rosemary, paprika, salt, and pepper. Coat chicken with this mixture.
  • Toss potatoes with 1 tbsp olive oil, salt, pepper, and rosemary. Arrange on one side of the pan.
  • Place chicken and potatoes in oven; roast 20 minutes. Add green beans tossed with remaining oil, garlic, salt, and pepper. Roast 15-20 minutes until done.
  • Drizzle lemon juice over the dish and garnish with extra parsley before serving.

Ensure chicken reaches an internal temperature of 165°F (74°C) for safety.
