Instructions
Pat chicken thighs dry, season with salt, pepper, and paprika. Let sit 10 minutes.
Heat oil in a skillet, sear chicken skin-side down 5-6 mins, then flip and sear 4 mins.
Whisk honey, soy sauce, garlic, and vinegar; mix cornstarch with water to make slurry.
Pour honey garlic mixture around chicken, transfer skillet to oven at 400°F (200°C), bake 20-25 mins.
Stir slurry into pan juices to thicken, sprinkle thyme, rest 5 mins before serving.
Notes
Ensure chicken reaches an internal temperature of 165°F (74°C) for safety.
