Ingredients

Chicken Thighs

  • 2.5 lbs bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 0.33 cup honey
  • 0.25 cup soy sauce
  • 6 cloves garlic, minced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon fresh thyme leaves

Instructions 

  • Pat chicken thighs dry, season with salt, pepper, and paprika. Let sit 10 minutes.
  • Heat oil in a skillet, sear chicken skin-side down 5-6 mins, then flip and sear 4 mins.
  • Whisk honey, soy sauce, garlic, and vinegar; mix cornstarch with water to make slurry.
  • Pour honey garlic mixture around chicken, transfer skillet to oven at 400°F (200°C), bake 20-25 mins.
  • Stir slurry into pan juices to thicken, sprinkle thyme, rest 5 mins before serving.

Notes

Ensure chicken reaches an internal temperature of 165°F (74°C) for safety.
