A delicious and easy one-pan dish combining tender chicken, flavorful honey mustard, and fluffy rice for a satisfying meal.

Ingredients

Broth

  • 2 cups chicken broth (Swanson preferred)

Dijon mustard

  • 4 tbsp dijon mustard (Grey Poupon preferred)

Honey

  • 4 tbsp honey

Garlic powder

  • 2 tsp garlic powder

Smoked paprika

  • 1/2 tsp smoked paprika

Chicken breasts

  • 4 pieces chicken breasts (pounded to an even 1-inch thickness)

Long grain white rice

  • 1 cup long grain white rice

Dried thyme

  • 1/2 tsp dried thyme

Salt

  • 3/4 tsp salt

Black pepper

  • 1/2 tsp black pepper

Instructions 

  • Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, garlic powder, and smoked paprika.
  • In a large ovenproof skillet, combine chicken broth, honey, Dijon mustard, thyme, and rice. Stir well.
  • Place chicken breasts on top of the rice mixture. Cover and bake for 35-40 minutes until chicken is cooked through and rice is tender.
  • Remove from oven, let rest for a few minutes, then serve hot.

Notes

Ensure chicken is pounded evenly for uniform cooking.
