A quick and flavorful one-pan meal featuring tender chicken thighs, fragrant couscous, and fresh lemon herbs.
Ingredients

boneless, skinless chicken thighs

Instructions
Season chicken with salt, pepper, garlic powder, paprika, oregano, and lemon zest.
Heat oil in skillet, brown chicken 2-3 minutes per side, then set aside.
Add butter, cook shallots and garlic 5 minutes, then toast couscous with lemon zest for 3-5 minutes.
Pour in chicken stock, nestle chicken in pan, add lemon slices, cover and cook 15 minutes.
Fluff couscous, top with herbs, and serve.
Notes
Use fresh herbs for the best flavor and adjust lemon to taste.
