Instructions
Preheat oven to 400°F (200°C).
Heat olive oil and butter in an oven-safe skillet over medium-high heat. Season chicken with salt, pepper, thyme, and oregano, then sear 2-3 minutes per side.
Add garlic, lemon juice, and zest; cook 30 seconds. Add vegetables around chicken, season as desired.
Transfer skillet to oven and roast 25-30 minutes until chicken reaches 165°F and vegetables are tender. Garnish with parsley before serving.
