Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 lemon lemon, juiced and zested
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste Salt and pepper (to taste)
  • 1 cup baby carrots
  • 1 cup Brussels sprouts, halved
  • 1 cup red potatoes, cubed

Garnish

  • Fresh parsley Fresh parsley for garnish

Instructions 

  • Preheat oven to 400°F (200°C).
  • Heat olive oil and butter in an oven-safe skillet over medium-high heat. Season chicken with salt, pepper, thyme, and oregano, then sear 2-3 minutes per side.
  • Add garlic, lemon juice, and zest; cook 30 seconds. Add vegetables around chicken, season as desired.
  • Transfer skillet to oven and roast 25-30 minutes until chicken reaches 165°F and vegetables are tender. Garnish with parsley before serving.

Notes

Ensure chicken is cooked to an internal temperature of 165°F for safety.
