A flavorful and easy one-pot meal combining tender chicken, rice, and vegetables for a satisfying dinner.

Ingredients

Protein

  • 4 pieces Bone-in, skin-on chicken thighs

Grains

  • 1.5 cups Long-grain white rice

Vegetables

  • 1 medium Onion
  • 3 cloves Garlic (minced)
  • 2 carrots Carrots (chopped)
  • 0.5 cup Peas (frozen or fresh)
  • 2 stalks Celery (chopped)

Broth & Seasonings

  • 3 cups Chicken Broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Thyme
  • 1 bay leaf Bay leaf

Fats & Oils

  • 2 tablespoons Olive Oil or Butter

Instructions 

  • Season chicken with salt, pepper, paprika, and garlic powder. Sear in oil until golden, then set aside.
  • Sauté onions, garlic, and carrots until fragrant and softened.
  • Add rice and toast for 1-2 minutes, then pour in broth, season, and scrape browned bits.
  • Nestle chicken back in, simmer covered for 20-25 minutes until rice is tender and chicken cooked through.
  • Stir in peas during last 5 minutes, then rest for 5 minutes before serving.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
