A quick and hearty one-pot meal combining tender chicken, orzo pasta, and fresh vegetables for a satisfying dinner.

Ingredients

Protein

  • 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)

Oil

  • 1 tablespoon olive oil

Vegetables

  • 1 onion onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup orzo pasta

Broth

  • 4 cups chicken broth

Vegetables

Cheese

  • 1/2 cup grated Parmesan cheese

Seasoning

Instructions 

  • Heat olive oil in a large pot over medium heat. Add chicken and cook until browned.
  • Add onion and garlic; cook until softened.
  • Stir in orzo and chicken broth; bring to a boil, then simmer for 15 minutes.
  • Mix in chopped vegetables and Parmesan; season with salt and pepper.
