A quick and flavorful one-pot meal combining tender chicken, rice, and classic taco seasonings for a satisfying dinner.

boneless skinless chicken breast, diced

long-grain white rice, uncooked

chicken broth

black beans, drained and rinsed (15 oz)

corn (frozen, canned drained, or fresh)

Instructions
Heat olive oil in a skillet, cook chicken until browned, then set aside.
Sauté onion and garlic until softened.
Stir in taco seasoning, then add rice, broth, and tomatoes. Bring to simmer, cover, and cook 15 minutes.
Mix in black beans and corn, cook 3–5 minutes. Top with cheese, cover until melted.
Squeeze lime over the dish, garnish with cilantro, and serve.
