A quick and flavorful one-pot meal combining tender chicken, rice, and classic taco seasonings for a satisfying dinner.

Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breast, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning (store-bought or homemade)
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1 can diced tomatoes with green chiles (10 oz)
  • 1 can black beans, drained and rinsed (15 oz)
  • 1 cup corn (frozen, canned drained, or fresh)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 lime cut into wedges
  • 2 tbsp chopped cilantro (optional)

Instructions 

  • Heat olive oil in a skillet, cook chicken until browned, then set aside.
  • Sauté onion and garlic until softened.
  • Stir in taco seasoning, then add rice, broth, and tomatoes. Bring to simmer, cover, and cook 15 minutes.
  • Mix in black beans and corn, cook 3–5 minutes. Top with cheese, cover until melted.
  • Squeeze lime over the dish, garnish with cilantro, and serve.
