Ingredients

Meat

  • 10 ounces smoked sausage (Andouille or kielbasa)

Pasta

  • 4 ounces pasta (penne or rigatoni)

Seasonings

  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil

Vegetables

  • 1 cup diced bell peppers (mixed colors)
  • 0.5 cup diced onion

Liquids

  • 2 cups low-sodium chicken broth ((add more if needed))
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese

Spices

  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon cayenne pepper (optional, for extra spice)

Greens

  • 1 cup fresh spinach (optional)

Garnish

Instructions 

  • Sauté sausage, bell peppers, and onion in olive oil until browned.
  • Add Cajun seasoning, garlic powder, cayenne, and cook for 1 minute.
  • Pour in chicken broth and bring to a boil, then add pasta and cook until al dente.
  • Stir in heavy cream and Parmesan cheese, simmer until thickened.
  • Add spinach (if using) and cook until wilted. Garnish with parsley before serving.

Notes
