A flavorful and easy one-pot dish combining tender chicken with fresh vegetables and Mediterranean spices.

Instructions
Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper, then brown on both sides. Remove and set aside.
In the same pot, sauté onion and garlic until softened. Add bell pepper and zucchini, cook until tender.
Stir in diced tomatoes, chicken broth, oregano, and paprika. Return chicken to the pot, cover, and simmer for 30 minutes.
Garnish with fresh parsley before serving.

Use fresh herbs for best flavor and adjust seasoning to taste.
