A flavorful and easy one-pot dish combining tender chicken with fresh vegetables and Mediterranean spices.

Ingredients

Protein

  • 4 pieces chicken thighs
  • 2 tablespoons olive oil

Vegetables

  • 1 piece onion, diced
  • 3 cloves garlic, minced
  • 1 piece bell pepper, diced
  • 1 piece zucchini, diced
  • 1 can 14 oz diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika

Seasonings

  • to taste Salt and pepper

Garnish

  • for garnish Fresh parsley

Instructions 

  • Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper, then brown on both sides. Remove and set aside.
  • In the same pot, sauté onion and garlic until softened. Add bell pepper and zucchini, cook until tender.
  • Stir in diced tomatoes, chicken broth, oregano, and paprika. Return chicken to the pot, cover, and simmer for 30 minutes.
  • Garnish with fresh parsley before serving.

Notes

Use fresh herbs for best flavor and adjust seasoning to taste.
