A vibrant and nutritious parfait combining tangy citrus smoothies, crunchy granola, and fresh currants for a delightful breakfast or snack.

Ingredients

Dry ingredients

  • 3 cups old-fashioned rolled oats
  • 1/3 cup sunflower seeds
  • 1/3 cup pumpkin seeds
  • 2 teaspoons cinnamon
  • 1 teaspoon all spice
  • 1 teaspoon cardamom
  • ½ cup olive oil
  • ¼ cup honey
  • ¼ cup brown rice syrup
  • ¼ cup Trop50
  • 2 tablespoons orange zest
  • ½ teaspoon pure orange extract
  • 1 ½ teaspoons kosher salt

Add-ins

  • 1 cup sliced almonds
  • ¾ cup toasted sweetened shredded coconut
  • ½ cup dried cranberries
  • ¼ cup Trop50
  • 1 large banana
  • 1 cup frozen mango
  • 1 cup pineapple
  • 3 cups preferred yogurt
  • 3 oz. red currants

Instructions 

  • Preheat oven to 325°F (163°C). Mix dry ingredients, then combine with wet mixture. Spread on baking sheet and bake for 30 minutes, stirring every 15 minutes. Cool and add almonds, coconut, cranberries.
  • For the smoothie, blend all ingredients until smooth.
  • Assemble parfaits by layering yogurt, citrus smoothie, and toppings. Swirl yogurt and smoothie before topping with currants and granola.

Notes

Store granola in an airtight container for up to 7 days at room temperature or 14 days refrigerated.
