Delicious and hearty steak burritos baked to perfection, packed with flavorful ingredients and melted cheese.

Ingredients

Oil and Aromatics

  • 3 tablespoons Grape Seed Oil or Olive Oil
  • 1/2 whole Onion, Diced
  • 3 cloves Garlic, Minced

Spice and Flour Mixture

  • 1/3 cup Chili Powder
  • 2 1/2 tablespoons Corn Flour
  • 3 cups Water
  • 6 ounces Tomato Paste
  • 2 teaspoons Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Salt

Main Fillings

  • 10 Large Soft Flour Tortillas Tortillas
  • 2 tablespoons Butter
  • 1 pound Sirloin Steak, Sliced Thin
  • 1/2 whole Onion, Diced
  • 1 whole Red Bell Pepper, Diced
  • 1 whole Green Bell Pepper, Diced
  • 1 whole Jalapeño, Diced

Additional Ingredients

  • to taste Refried Beans
  • 3 cups Cheddar Cheese, Shredded
  • 3 cups Monterey Jack Cheese, Shredded
  • 1 whole Avocado, Diced
  • to taste Tomatoes, Diced
  • to taste Cilantro, Chopped
  • to taste Sour Cream

Instructions 

  • Cook oil and onion until caramelized, then add garlic, chili powder, and corn flour; stir for 45 seconds.
  • Gradually add water and remaining ingredients; simmer while preparing steak filling.
  • Cook steak with butter and oil until browned, add vegetables, then stir in enchilada sauce and remove from heat.
  • Assemble burritos with beans, steak filling, and cheese, then roll and place seam side down in baking dish.
  • Bake at 400°F (200°C) for 15-20 minutes until cheese melts; garnish and serve.

Notes

For extra flavor, add fresh cilantro and serve with sour cream.
