  • 1 whole whole chicken or chicken pieces (2.5-3.5 lbs), bone-in skin-on
  • 1 Tbsp paprika, sweet or smoked
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 2 Tbsp olive oil or melted butter
  • 1 tsp brown sugar (optional)

Instructions 

  • Pat the chicken dry with paper towels for crispy skin.
  • Mix paprika, herbs, garlic, onion, salt, pepper, and brown sugar. Rub mixture and drizzle with oil over chicken.
  • Let chicken rest at room temperature for 15-30 minutes.
  • Preheat oven to 400°F (200°C). Roast chicken on a wire rack for 45-60 minutes until internal temp reaches 165°F (74°C).
  • Tent with foil and rest for 10-15 minutes before carving and serving.
