A flavorful and elegant dish featuring tender chicken thighs roasted with sweet grapes and fragrant rosemary, perfect for a quick yet impressive meal.

seedless red grapes

Instructions
Preheat oven to 425℉/220℃. Pat chicken dry, season with salt and pepper.
Heat oil in a skillet over medium-high. Brown chicken 2½-3 minutes per side, then transfer to oven.
Arrange chicken, grapes, and shallots in the skillet. Roast for 15-20 minutes until cooked through.
Transfer chicken and grapes to a platter. Add broth and rosemary to skillet, boil until reduced by half (~3 min).
Return chicken to skillet or pour sauce over, garnish with remaining rosemary, and serve warm.
Notes
For extra flavor, let the chicken rest for a few minutes before serving.
