A flavorful and elegant dish featuring tender chicken thighs roasted with sweet grapes and fragrant rosemary, perfect for a quick yet impressive meal.

Ingredients

Meat

  • 3 pounds chicken thighs, boneless or bone-in
  • 1 tablespoon olive oil
  • 1.5 cups seedless red grapes
  • 2 large shallots, sliced thin
  • 1 cup chicken broth or stock
  • 1 tablespoon fresh rosemary, finely chopped

Instructions 

  • Preheat oven to 425℉/220℃. Pat chicken dry, season with salt and pepper.
  • Heat oil in a skillet over medium-high. Brown chicken 2½-3 minutes per side, then transfer to oven.
  • Arrange chicken, grapes, and shallots in the skillet. Roast for 15-20 minutes until cooked through.
  • Transfer chicken and grapes to a platter. Add broth and rosemary to skillet, boil until reduced by half (~3 min).
  • Return chicken to skillet or pour sauce over, garnish with remaining rosemary, and serve warm.

Notes

For extra flavor, let the chicken rest for a few minutes before serving.
