A deliciously roasted cabbage dish infused with garlic and topped with parmesan cheese, perfect as a side or a main.

Ingredients

Vegetables

  • 1 medium green cabbage ((2-3 pounds))
  • 4 tablespoons olive oil (divided)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 6 cloves garlic (minced (about 2 tablespoons))
  • 1 cup freshly grated parmesan cheese (divided)
  • 2 tablespoons fresh parsley (chopped)
  • 1/4 teaspoon red pepper flakes ((optional))

Instructions 

  • Preheat oven to 425°F (220°C) and prepare cabbage.
  • Cut cabbage into 1-inch thick rounds, arrange on a baking sheet.
  • Drizzle with olive oil, season with salt and pepper, and massage in.
  • Roast for 15 minutes until edges are golden, then add garlic-oil and cheese.
  • Return to oven for 10-15 minutes until tender and cheese is golden.
  • Let rest, then sprinkle with remaining cheese and parsley before serving.

Notes

For extra flavor, try adding a squeeze of lemon juice before serving.
