A fresh and vibrant salad combining sweet peaches, creamy mozzarella, and fragrant basil, finished with a balsamic glaze.

Ingredients

Balsamic reduction

  • 0.5 cup balsamic vinegar
  • 1 teaspoon honey

Peaches

  • 2 medium peaches (ripe, sliced)

Mozzarella

  • 8 oz mozzarella ball (8 oz ball of mozzarella)

Fresh basil

  • 1 bunch fresh basil (torn leaves)

Sea salt and black pepper

  • to taste sea salt and freshly ground black pepper

Instructions 

  • Combine balsamic vinegar and honey in a small saucepan, bring to a boil, then simmer for 10-15 minutes until reduced. Cool in refrigerator.
  • Slice peaches into quarters and mozzarella into thin slices. Tear basil leaves into pieces.
  • Arrange peach slices, mozzarella, and basil on a plate in a circular pattern. Season with salt and pepper.
  • Drizzle with balsamic reduction and a little balsamic glaze before serving.

Notes

For best flavor, serve immediately after assembling.
