A delicious and healthy make-ahead breakfast combining the flavors of peach cobbler with creamy oats, perfect for busy mornings.

Ingredients

Base

  • 2 cups rolled oats
  • 2 cups almond milk or any milk of your choice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon maple syrup (optional)
  • 2 ripe peaches diced peaches
  • 1/2 cup Greek yogurt (optional for creaminess)
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions 

  • Mix oats, milk, vanilla, cinnamon, and maple syrup in a bowl.
  • Fold in diced peaches and Greek yogurt if desired.
  • Divide into jars and top with chopped nuts if using.
  • Refrigerate overnight to soak.
  • In the morning, stir and enjoy cold or warm briefly.

Notes

For extra flavor, add a drizzle of honey or more nuts on top.
