Instructions
Whisk sauce ingredients in a bowl and set aside.
Spiralize sweet potatoes into noodles or cut into thin strips.
Sauté bell pepper, bean sprouts, green onion, and garlic for 2-3 minutes.
Add sweet potato noodles and cook for 5-7 minutes, stirring occasionally.
Stir in sauce with 2-3 minutes remaining, adding water if needed to thin.
Serve topped with chopped peanuts, cilantro, and lime wedges.
Notes
Use fresh herbs and adjust sauce thickness with water as needed.
