A vibrant and healthy dish featuring spiralized sweet potatoes tossed in a flavorful peanut sauce, topped with fresh herbs and crunchy peanuts.

Ingredients

Vegetables and Noodles

  • 2 large sweet potatoes, peeled and spiralized (or pre-cut)
  • 1 red bell pepper red bell pepper, julienned
  • 1 cup bean sprouts
  • 2 green onions green onions, diced
  • 2 cloves garlic, minced
  • 1/4 cup cilantro, roughly chopped
  • 1/2 cup peanuts, roughly chopped (to serve)
  • Lime wedges lime wedges (to serve)
  • 1/3 cup peanut butter, almond butter or cashew butter
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon fresh lime juice
  • 1 clove garlic, minced
  • 1-inch fresh ginger, grated ginger, grated
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon chilli flakes (optional)
  • 1/4 – 1/2 cup water (to thin sauce as needed)

Instructions 

  • Whisk sauce ingredients in a bowl and set aside.
  • Spiralize sweet potatoes into noodles or cut into thin strips.
  • Sauté bell pepper, bean sprouts, green onion, and garlic for 2-3 minutes.
  • Add sweet potato noodles and cook for 5-7 minutes, stirring occasionally.
  • Stir in sauce with 2-3 minutes remaining, adding water if needed to thin.
  • Serve topped with chopped peanuts, cilantro, and lime wedges.

Notes

Use fresh herbs and adjust sauce thickness with water as needed.
