Ingredients

Fruits

  • 6 medium Bartlett pears (slightly underripe) (just under 3 pounds)
  • 2 tablespoons maple syrup
  • 2 teaspoons lemon juice
  • 1 tablespoon cornstarch
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • teaspoon ground ginger
  • Pinch ground nutmeg
  • Pinch salt
  • ½ cup packed brown sugar
  • ¾ teaspoon ground cinnamon
  • 6 tablespoons unsalted butter (melted)
  • 1 cup plus 2 tablespoons all-purpose flour (140g)

Instructions 

  • Preheat oven to 350°F (177°C). Grease baking dish.
  • Peel and chop pears, then mix with syrup, lemon juice, cornstarch, vanilla, and spices.
  • Mix brown sugar, cinnamon, melted butter, and flour to make crumble topping.
  • Pour pears into dish, top with crumble, and bake for 45-50 minutes until golden.
  • Cool for 10-15 minutes before serving.

Notes

Use slightly underripe pears for best texture.
