A flavorful and easy-to-make rice pilaf with vermicelli and herbs, perfect as a side dish or main course.

Ingredients

Broth and Seasonings

  • 2 2/3 cups low-sodium chicken broth
  • 1/3 cup unsalted butter
  • 1 tsp kosher sea salt
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper
  • 1/8 tsp paprika
  • pinch onion powder
  • 2 tablespoons olive oil
  • 1/3 cup vermicelli (or orzo)
  • 1 cup long grain white rice
  • 1 tbsp fresh parsley (chopped)

Instructions 

  • Simmer broth, butter, salt, garlic powder, pepper, paprika, and onion powder until boiling.
  • Heat olive oil in a skillet over medium-low heat.
  • Add vermicelli and cook until browned, then add rice and cook until bright white.
  • Pour broth into skillet, cover, and simmer for 15 minutes.
  • Uncover, add parsley, cover, and cook 5 more minutes until absorbed.
  • Fluff with a fork and serve warm.

Notes

For extra flavor, toast the vermicelli until golden before adding rice.
