Ingredients
Bell Peppers
4largebell peppers (red, yellow, or green)
2cupscooked chicken, shredded
0.5cupbasil pesto
1cupcooked quinoa (or rice)
0.5cupcherry tomatoes, halved
0.5cupmozzarella cheese, shredded
0.25cupgrated Parmesan cheese
to tasteSalt and pepper
for garnishFresh basil leaves
Instructions
Preheat oven to 375°F (190°C). Cut tops off peppers and remove seeds. Stuff with mixture.
Mix chicken, pesto, quinoa, tomatoes, and half of cheese. Season with salt and pepper.
Fill peppers with mixture, top with remaining cheese and Parmesan.
Bake covered for 25 minutes, then uncover and bake 10-15 minutes until golden.
Let cool slightly, garnish with basil, and serve.
