Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts (about 6 oz each)
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 0.5 cup barbecue sauce (divided)

Oils & Spices

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional)

Glaze & Sauce

  • 0.25 cup barbecue sauce (for glaze)
  • 2 tablespoons pineapple juice
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar

Garnish

  • 2 green onions green onions (chopped)
  • 1 tablespoon fresh cilantro (chopped)
  • to taste optional sesame seeds (for garnish)

Instructions 

  • Preheat oven to 425°F (220°C). Pat chicken dry and place in a baking dish.
  • Mix spices and rub onto chicken with olive oil. Arrange pineapple around chicken and coat with 1/4 cup barbecue sauce.
  • Cover with foil and bake for 20 minutes. Prepare glaze by mixing remaining barbecue sauce, pineapple juice, honey, and vinegar.
  • Remove foil, brush glaze over chicken and pineapple, bake uncovered for 10-15 minutes, then broil for 2-3 minutes for caramelization.
  • Rest for 10 minutes, then garnish with green onions, cilantro, and sesame seeds before serving.

Notes

For extra flavor, marinate the chicken with spices overnight.
