Main Ingredients

  • 1 cup Jasmine Rice or long-grain rice
  • 1 lb Boneless, Skinless Chicken Thighs or chicken breast (Tofu as alternative)
  • 1 cup Pineapple fresh or canned
  • 1 medium Red Bell Pepper or any bell pepper (sliced)
  • 1 cup Frozen Peas or fresh peas
  • 2 stalks Green Onions or chives
  • 2 tbsp Soy Sauce low-sodium preferred
  • 2 tbsp Oyster Sauce or hoisin sauce
  • 1 tbsp Sesame Oil or olive oil
  • 2 cloves Garlic minced
  • 1 inch Fresh Ginger grated or ground
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Vegetable Oil or any neutral oil

Instructions 

  • Cook rice according to package instructions.
  • Heat oil in a large skillet over medium-high heat. Cook chicken until browned and cooked through, about 5-7 minutes. Remove and set aside.
  • In the same skillet, add garlic and ginger; sauté for 1 minute. Add bell pepper, pineapple, and peas; cook for 3-4 minutes.
  • Return chicken to skillet, add soy sauce, oyster sauce, and sesame oil; stir to combine. Cook for another 2 minutes.
  • Serve the stir-fry over cooked rice, garnished with chopped green onions or chives.
