A hearty and nutritious plant-based soup packed with lentils and fresh vegetables, perfect for a wholesome meal.

Ingredients

Vegetables

  • 1 cup diced onions
  • 6 small potatoes, diced (see note above)
  • 3 large carrots, sliced
  • 3 cups chopped broccoli

Dry Lentils

  • 1 cup dry lentils

Liquids & Seasonings

  • 2 quarts water
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon thyme
  • 1 bay leaf bay leaf

Instructions 

  • Add all chopped vegetables to a large pot and sauté briefly if desired.
  • Add dry lentils, water, seasonings, and bay leaf. Cover and bring to a simmer.
  • Simmer for 30 minutes until vegetables and lentils are tender.
  • Remove bay leaf, check seasoning, and serve hot.

Notes

Feel free to add herbs or spices for extra flavor.
