Ingredients

Instructions
Add all chopped vegetables to a large pot and sauté briefly if desired.
Add dry lentils, water, seasonings, and bay leaf. Cover and bring to a simmer.
Simmer for 30 minutes until vegetables and lentils are tender.
Remove bay leaf, check seasoning, and serve hot.
Notes
Feel free to add herbs or spices for extra flavor.
