A delightful tart combining sweet plums and creamy vanilla custard in a buttery crust, perfect for a special occasion or afternoon treat.

Ingredients

Crust

  • 250 gr Plain Flour
  • 125 gr Unsalted Butter (at room temperature)
  • 1 egg yolk Egg Yolk
  • 8 gr Cornstarch
  • 10 gr Brown Sugar

Custard

  • 500 ml Full Fat Milk
  • 50 gr Brown Sugar
  • 5 egg yolks Egg Yolks
  • 50 gr Cornstarch

Flavoring

  • 1 vanilla bean Vanilla Bean (or 1/2 teaspoon vanilla paste)

Fruits

  • 2 red plums Red Plums
  • 2 black plums Black Plums
  • 1 dozen Mint Leaves (Optional)

Instructions 

  • Prepare the tart crust by mixing flour, butter, egg yolk, and sugar, then chill and blind bake.
  • Heat milk with vanilla bean, then whisk in egg yolks, sugar, and cornstarch to make the custard. Cook until thickened.
  • Pour custard into the baked crust and chill until set.
  • Slice plums and arrange on top of the custard. Garnish with mint leaves if desired.

Notes

Chill the tart thoroughly before serving for best results.
