A hearty and flavorful baked burrito dish packed with protein and fresh ingredients, perfect for a quick family meal.

Ingredients

Protein

  • 2 cups Chicken, cooked (Use leftovers or rotisserie chicken)
  • 1 can Black beans (Drained and rinsed)
  • 1 bunch Fresh Cilantro (For garnish)
  • 1 cup Corn (Fresh or frozen, no need to thaw)
  • 1 cup Salsa (Choose mild or spicy)
  • 2 cups Rice, cooked (Best if cooked in advance)
  • 1 cup Cheese (Monterey Jack or mild cheddar)
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • to taste Salt and pepper Salt and pepper (Add salt while mixing ingredients)

Instructions 

  • Mix cooked chicken, black beans, corn, salsa, rice, cheese, chili powder, cumin, salt, and pepper in a bowl.
  • Transfer mixture to a baking dish and spread evenly.
  • Bake at 375°F (190°C) for 20 minutes until heated through and cheese is melted.
  • Garnish with chopped cilantro before serving.

Notes

Use leftovers for quick assembly and customize spice levels to taste.
