A moist and protein-packed pumpkin bread perfect for a healthy snack or breakfast.
Ingredients
Dry ingredients

oat flour
(do not pack, scoop into measuring cup and level)

pumpkin puree

greek yogurt

vanilla flavored protein powder
(packed)

pumpkin pie spice

baking powder

baking soda
Add-ins

dark chocolate chips
Instructions
Preheat oven to 350°F (175°C) and prepare a loaf pan with parchment and spray.
Mix oat flour, pumpkin, yogurt, eggs, protein powder, spices, baking powder, and baking soda until combined. Fold in chocolate chips.
Pour batter into pan and sprinkle remaining chocolate chips on top.
Bake for 35-45 minutes until a toothpick comes out clean.
Let cool, then slice and enjoy!
