A moist and protein-packed pumpkin bread perfect for a healthy snack or breakfast.

Ingredients

Dry ingredients

  • 1 ¼ cup oat flour (do not pack, scoop into measuring cup and level)
  • 1 cup pumpkin puree
  • ¾ cup greek yogurt
  • 2 large eggs
  • ½ cup vanilla flavored protein powder (packed)
  • ½ tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda

Add-ins

  • ½ cup dark chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a loaf pan with parchment and spray.
  • Mix oat flour, pumpkin, yogurt, eggs, protein powder, spices, baking powder, and baking soda until combined. Fold in chocolate chips.
  • Pour batter into pan and sprinkle remaining chocolate chips on top.
  • Bake for 35-45 minutes until a toothpick comes out clean.
  • Let cool, then slice and enjoy!

Notes

Store in an airtight container for up to 3 days or freeze for longer storage.
