Ingredients
Bananas and Pumpkin
1cupmashed ripe bananas (about 2-3 bananas)
1cuppumpkin puree(canned or homemade)
Dairy and Sweeteners
1/2cupunsalted butter, melted and cooled
3/4cupbrown sugar, packed
2largeeggs
1teaspoonvanilla extract
Dry Ingredients
1 3/4cupsall-purpose flour
1teaspoonbaking soda
1/2teaspoonbaking powder
1/2teaspoonsalt
1teaspoonground cinnamon
1/2teaspoonground nutmeg
1/4teaspoonground ginger
Optional Nuts
1/2cupchopped walnuts or pecans(optional)
Instructions
Preheat oven to 350°F (175°C). Grease or line a loaf pan.
Mix mashed bananas, pumpkin, melted butter, and sugar. Add eggs and vanilla; blend well.
Combine dry ingredients; gradually add to wet mixture. Fold in nuts if using.
Pour batter into pan, smooth top, and bake for 50-60 minutes until a toothpick comes out clean.
Cool in pan 10-15 minutes, then transfer to wire rack. Slice and serve.
Notes
For extra flavor, add a sprinkle of cinnamon on top before baking.
