Ingredients

Oil

  • 3 tbsp olive oil

Garlic

  • 3 cloves garlic cloves

Onion

  • 1/2 onion onion

Chicken

  • 2 lbs chicken breast

Pumpkin Puree

  • 1/4 can pumpkin puree ((usually 15oz can))

Chicken Stock

  • 1 cup chicken stock/broth

Coconut Milk

  • 1/2 cup coconut milk

Tomato Paste

  • 1 tbsp tomato paste

Spices

  • 1/2 tsp cumin
  • 1 tbsp curry powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper

Salt

  • 1/2 tsp salt (or to taste)

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped garlic and diced onion; sauté until fragrant and translucent.
  • Add chicken pieces and cook until browned.
  • Stir in pumpkin puree, chicken stock, coconut milk, tomato paste, and spices; simmer for 20 minutes.
  • Season with salt, serve hot with rice or bread.

Notes

Use fresh garlic for best flavor and adjust spice levels to taste.
