Instructions
Sauté chopped onion and minced garlic in olive oil for 5 minutes until soft.
Add pumpkin, chopped tomatoes, vegetable stock, black beans, and chickpeas. Stir in half the cumin and chili powder, season with salt and pepper.
Adjust seasoning with remaining cumin and chili powder as desired. Bring to a boil, then reduce to simmer for 20 minutes.
Serve hot, garnished with chopped green onion.
