Deliciously moist and healthy, these pumpkin chocolate chip oatmeal muffins are perfect for breakfast or a snack!

Ingredients

Baking Ingredients

  • 2 pcs eggs
  • 120 g pumpkin puree
  • 120 ml unsweetened almond milk ((or skim))
  • 30 ml maple syrup
  • 2.5 ml vanilla extract
  • 1.25 g pumpkin pie spice
  • 1.5 g salt
  • 100 g rolled oats
  • 45 g chocolate chips
  • 5 g baking powder

Instructions 

  • Preheat the oven to 375 degrees. In a large bowl, whisk together the eggs, pumpkin, milk, maple syrup, vanilla extract, pumpkin pie spice, and salt.
  • Add the oats, chocolate chips, and baking powder. Stir until combined.
  • Pour into muffin tin lined with liners or sprayed with cooking spray. Bake for 18-20 minutes until cooked through.

Notes

For extra flavor, consider adding nuts or dried fruit!
