A moist and flavorful coffee cake infused with pumpkin and warm spices, perfect for fall mornings or cozy afternoons.

Ingredients

Dry ingredients

  • 1/4 cup all purpose flour
  • 1/4 cup light brown sugar
  • 1 tablespoon cinnamon
  • 2 cup all purpose flour
  • 2 teaspoons cinnamon
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Wet ingredients

  • 1 cup canned pumpkin
  • 1/2 cup canola oil (or vegetable oil)
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup maple syrup

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix dry ingredients in a bowl. Combine wet ingredients in another bowl.
  • Pour wet into dry, stir until just combined. Spread batter in prepared pan.
  • Prepare crumb topping with dry ingredients and cold butter until crumbly. Sprinkle over batter.
  • Bake for 35 minutes, then cool slightly before serving.

Notes

Ensure not to overmix the batter for a light texture.
