Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together dry ingredients.
Cream butter and sugars until light and fluffy, then add pumpkin, egg, and vanilla; mix until smooth.
Add dry ingredients and mix just until combined.
Scoop dough onto baking sheet, spacing 2 inches apart.
Bake 13–15 minutes until set and fluffy. Cool on a wire rack.
