Deliciously moist pumpkin muffins filled with a creamy cheese center, perfect for fall!

Ingredients

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 0.25 teaspoon salt

Wet Ingredients

  • 1.5 cups canned pumpkin puree
  • 0.25 cups melted butter
  • 1 teaspoon vanilla extract

Filling

  • 4 ounces cream cheese (softened)
  • 2 tablespoons granulated sugar
  • 1 teaspoon all-purpose flour
  • 1 teaspoon milk
  • 0.5 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350°F and prepare muffin tin.
  • Mix dry ingredients in one bowl and wet ingredients in another.
  • Combine wet and dry ingredients, then fill muffin tin.
  • Prepare cream cheese filling and pipe into muffins.
  • Sprinkle pumpkin seeds on top and bake for 15 minutes.
  • Cool slightly and serve!

Notes

For extra flavor, add chocolate chips or nuts to the batter!
