Ingredients

Dry Ingredients

  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp ground ginger

Wet Ingredients

  • 1 cup granulated sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1 tsp vanilla extract

Cream Cheese Filling

  • 8 oz cream cheese, softened
  • 0.25 cup granulated sugar
  • 1 tsp vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C) and line a muffin pan.
  • Whisk together dry ingredients in a large bowl.
  • Mix wet ingredients until smooth in another bowl.
  • Combine wet and dry ingredients, stir gently.
  • Beat cream cheese filling ingredients until smooth.
  • Fill muffin cups and pipe cream cheese into centers.
  • Bake for 18–22 minutes, cool before serving.

Notes

For extra flavor, add chocolate chips or nuts to the batter!
