Ingredients

Batter

  • ½ cup oil (canola or vegetable oil)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 ¼ cups pumpkin puree
  • 2 large eggs
  • ½ cup milk
  • 1 ¾ cups all-purpose flour (spoon and leveled)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 4 teaspoons pumpkin pie spice

Cream Cheese Filling

  • 8 oz cream cheese
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 375°F (190°C) and prepare muffin pan.
  • Mix oil, sugar, and vanilla; add pumpkin, eggs, and milk. Combine dry ingredients and mix.
  • Beat cream cheese and sugar; add egg and vanilla until smooth.
  • Fill muffin cups with batter, add cream cheese filling, and swirl.
  • Bake for 15-18 minutes; cool in pan for 5 minutes before transferring.

For best results, use room temperature ingredients.
