Ingredients

Cream Cheese Filling

  • 8 oz cream cheese, softened to room temperature
  • 1/3 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Pumpkin Mixture

  • 3/4 cup pumpkin puree (not pumpkin pie filling)
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ground ginger
  • pinch salt

Pastry

  • 2 sheets frozen puff pastry, thawed
  • 1 egg beaten with 2 tablespoons water (for egg wash)

Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions 

  • Preheat oven to 400°F and line baking sheets with parchment paper.
  • Beat cream cheese with sugar until smooth, then mix in egg yolk and vanilla.
  • Heat pumpkin puree until reduced, then mix in brown sugar and spices.
  • Roll puff pastry, cut into rectangles, and score edges.
  • Fill with cream cheese and pumpkin mixtures, swirl gently.
  • Brush with egg wash and bake until golden brown.
