Deliciously moist pumpkin muffins topped with a crunchy crumb topping, perfect for fall!

Ingredients

crumb topping

  • 4 tablespoons butter, room temperature
  • ¾ cup all-purpose flour
  • ½ cup dark brown sugar

muffins

  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup dark brown sugar, packed
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 2 large eggs, room temperature
  • 15 oz pumpkin puree (not pumpkin pie filling)
  • ½ cup vegetable oil
  • 1 ½ teaspoons pure vanilla extract

Instructions 

  • Preheat oven to 375°F (190°C) and line a muffin pan with paper liners.
  • Combine crumb topping ingredients until large crumbs form; chill for 30 minutes.
  • Whisk together dry ingredients in a large bowl.
  • In another bowl, whisk wet ingredients together.
  • Mix wet and dry ingredients until just combined; spoon into muffin liners and top with crumbs.
  • Bake for 20–22 minutes; cool before serving.

Notes

For extra flavor, consider adding nuts or chocolate chips to the batter.
