Deliciously moist and hearty, these pumpkin oat muffins are perfect for breakfast or a snack.

Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • ½ cup packed brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • ¼ teaspoon baking soda

Wet Ingredients

  • 1 large egg, room temperature, lightly beaten
  • ¾ cup canned pumpkin puree
  • ¼ cup 2% milk
  • ¼ cup vegetable or canola oil
  • 1 cup old-fashioned oats
  • ½ cup raisins
  • 1 cup chopped walnuts
  • ½ cup chocolate chips (regular or mini)

Streusel Topping

  • cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • ¾ teaspoon pumpkin pie spice
  • 1 tablespoon cold butter

Instructions 

  • Preheat oven to 375°F (190°C) and line a muffin pan with liners.
  • Whisk together dry ingredients in a large bowl.
  • Combine wet ingredients in a separate bowl and blend well.
  • Mix wet into dry ingredients and fold in oats and add-ins.
  • Prepare streusel topping and sprinkle over muffins.
  • Bake for 20 minutes and cool before serving.

Notes

For extra flavor, try adding nuts or spices to the batter.
