Deliciously moist and healthy, these pumpkin oatmeal muffins are perfect for breakfast or a snack.

Ingredients

Dry Ingredients

  • 2 cups oats (rolled or quick oats)
  • 1 cup pumpkin puree (canned or fresh)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt

Wet Ingredients

  • 1/2 cup honey or maple syrup
  • 1 cup milk (dairy or non-dairy)
  • 2 large eggs

Instructions 

  • Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  • Blend all ingredients in a blender until smooth.
  • Pour the batter into the prepared muffin tin.
  • Bake for 20 minutes or until a toothpick comes out clean.
  • Let cool for a few minutes before removing from the tin.

Notes

For added flavor, consider mixing in nuts or chocolate chips.
