Delight in these creamy pumpkin pie bars topped with a crunchy streusel for a perfect fall treat.

Ingredients

Crust and Streusel

  • 1 1/2 cups flour
  • 1 cup old fashioned rolled oats
  • 1 1/2 cups brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup butter (melted)

Filling

  • 2 8 oz pkgs cream cheese, room temperature
  • 1 cup granulated sugar
  • 1 cup canned pumpkin (not pumpkin pie filling)
  • 2 tablespoons all-purpose flour
  • 2 teaspoons pumpkin pie spice (or cinnamon)
  • 2 tablespoons heavy whipping cream (or milk)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9x13 inch pan. Mix flour, oats, sugar, cinnamon, and salt; add melted butter and press half into the pan.
  • Beat cream cheese and sugar until smooth. Add pumpkin, flour, spices, and cream; beat until combined. Mix in eggs one at a time.
  • Pour filling over crust, sprinkle remaining streusel on top. Bake for 35-45 minutes until set. Cool before serving.
