Delicious and nutritious pumpkin protein bars perfect for a healthy snack or on-the-go energy boost.
Ingredients
Base ingredients

pumpkin puree (not pumpkin pie filling)

applesauce (unsweetened)

egg whites (or 2 large eggs)

cup
maple syrup or honey

pure vanilla extract

pumpkin pie spice

baking powder

baking soda

plant based vanilla protein powder (add 2-3 tbsp maple syrup if using unflavored)

quick oats or rolled oats

walnuts or pecans (coarsely chopped)
Cooking spray (I use Misto)
Instructions
Preheat oven to 375°F (190°C), line an 8x8 baking dish with parchment and spray with cooking spray.
Whisk together pumpkin, applesauce, egg whites, maple syrup, vanilla, spices, baking powder, baking soda, and protein powder. Stir in oats and nuts.
Pour batter into prepared dish, level, and bake for 35 minutes until a toothpick comes out clean.
Cool for 10 minutes, then transfer to a rack and cool for 30 minutes. Cut into 8 or 10 bars and serve.
Notes
For added flavor, consider drizzling with a little honey or topping with extra nuts.
