Delight in these moist, protein-packed pumpkin cake pops that are perfect for a healthy treat or snack.

Ingredients

Dry Ingredients

  • 0.5 cup Whole Wheat Pastry Flour (60g, see post for sub)
  • 0.5 cup Vanilla Protein Powder (Whey-casein) (45g)
  • 0.25 cup Unflavored Protein Powder (Whey-casein) (22g)
  • 2 Tbsp Flavored Peanut Butter Powder (16g, Recommendation below)
  • 2 tsp Pumpkin Pie Spice
  • 1 tsp Baking Soda

Wet Ingredients

  • 180 ml Hot Water
  • 120 g Pumpkin Puree
  • 7 g Melted Butter
  • 10 ml Lemon Juice
  • 28 g Non-fat Greek Yogurt
  • 28 g Reduced Fat Cream Cheese (Softened)
  • 8 g Vanilla Protein Powder (1.5 tbsp)
  • 21 g White Chocolate Chips (Sugar free recommended)
  • 21 g Pumpkin Spice Chocolate Chips (Sugar free recommended)
  • 0.125 Tbsp Coconut Oil

Instructions 

  • Preheat oven to 350°F and line a 9x13” pan with parchment.
  • Whisk dry ingredients in a bowl; mix wet ingredients in a large bowl.
  • Combine dry and wet, mix until just combined; avoid over-mixing.
  • Pour batter into pan immediately and bake 8-10 mins; cool completely.

Notes

Ensure not to over-mix to keep the cake light and moist.
