Deliciously moist and packed with protein, these pumpkin muffins are perfect for a healthy snack or breakfast.

Ingredients

Dry Ingredients

  • 1.25 cups whole wheat pastry flour
  • 0.5 cup protein powder ((plain, vanilla, or chocolate))
  • 2 tsp cinnamon
  • 1.5 tsp baking soda
  • 0.5 tsp ground ginger
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cloves

Wet Ingredients

  • 15 oz canned pumpkin puree ((not pumpkin pie filling))
  • 0.75 cup coconut sugar ((or brown sugar))
  • 2 large eggs
  • 0.25 cup avocado oil
  • 0.25 cup plain greek yogurt
  • 2 tsp vanilla extract
  • 0.5 cup mini chocolate chips ((optional))

Instructions 

  • Preheat oven to 375° and line a muffin tin.
  • Mix dry ingredients in a bowl and set aside.
  • Whisk wet ingredients in another bowl until smooth.
  • Combine dry and wet ingredients, then fold in chocolate chips.
  • Divide batter into muffin tin and top with more chocolate chips.
  • Bake for 20-22 minutes until a toothpick comes out clean.

Notes

For extra flavor, try adding nuts or seeds to the batter!
