Ingredients

Dry ingredients

  • 1 cup rolled oats
  • 3/4 cup egg whites (about 6 egg whites)
  • 1/2 cup cottage cheese
  • 1/4 cup pumpkin puree
  • 1 tbsp. maple syrup
  • 1 tsp. pumpkin pie spice

Instructions 

  • Blend all ingredients until smooth.
  • Heat a nonstick skillet over medium heat and lightly coat with oil or spray.
  • Pour batter into 1/4 cup rounds and cook until bubbles form, then flip and cook until golden.
  • Serve with toppings like nuts or syrup.
